Sprouted Chickpea Salad
- 2 Cups dried Inari Sprouted Chickpeas
- 1 English cucumber
- 1 Bunch Parsley
- 1 Bunch Green onions
- 1 Red Pepper
- Cook Chickpeas as directed on package, drain well set aside to cool.
- Seed cucumber and chop along with parsley green onions and red pepper.
- Set aside in salad bowl.
- 1/2 cup Olive Oil
- Juice of 1 Lemon
- 1/2 Tsp Cumin
- 1/4 cup Balsamic vinegar
- 2 Cloves garlic
- Salt to taste
Combine all ingredients and mix with salad!
